500g organic minced meet (beef)
4 large tomatoes
2 spring onions
salt + pepper + nutmeg
Cut onion into small pieces and sauté until they are translucent. Add minced meat, salt and nutmeg and fry until the meat is roasted. Don't forget to turn it over from time to time!
In the meantime, cut the aubergine, tomatoes and spring onions into small chunks. When the meat is ready add first the aubergine. Turn everything over until most aubergine chunks are ready, then add tomatoes and spring onions. Season with salt and pepper, and sauté for another 3-5 minutes! Top the finished dish with fresh coriander and serve with rice or potatoes - bon appétit! :)
